The quintessential American Cobb salad is just a mélange of flavors and textures that stood the test of time in its own right. In the 1930s, it was created by Bob Cobb, the owner of the famous Brown Derby in Hollywood, California. According to legend, Cobb constructed a salad using leftover goodies from the restaurant kitchen, ranging from lettuce, avocado and tomatoes, chicken, bacon, hard-boiled eggs, and Roquefort cheese, all topped by a tangy vinaigrette. Recently, plant-based eating has become a strong trend based on health, welfare of animals, and environmental reasons. Many traditional recipes, including the Cobb salad, have been reimagined using vegan ingredients. Swapping out animal products for their plant-based counterparts allows us to enjoy all the flavors and satisfaction of the original dish while aligning with our ethical and Dietary Preferences.
