Flour is the key ingredient that determines the structure and texture of your cookies. It should be used in all-purpose flour to ensure perfect balance or bread flour for chewy cookies. Cake flour should not be used as it is too fragile for chocolate chip cookies.
The richness and buttery flavor of cookies depend on butter. Using unsalted butter gives you control over the amount of salt in your final recipe. Make sure to let the butter come to room temperature before you cream it with sugar. This helps incorporate the sugar more effectively and gives you a smooth texture.
Chocolate chip cookies have the perfect marriage of sweetness and caramel from both brown and white sugars. The brown sugar provides a rich, moist, chewy texture, while white sugar contributes to the cookies' spreading and crispy edges. Dark brown sugar darkens the molasses flavour and light brown sugar mellows it down.
Eggs not only act to hold the cookie dough together but also add moisture and richness. Use large eggs; it is recommended to let them sit at room temperature. Do not overbeat your eggs, or this will result in a thick cookie.
Creaming Butter and sugar is a way to create the light and airy base for the cookies. Beat the butter and sugars together until it is light and fluffy. This will take about 2-3 minutes of beating. You can roll the dough in balls and then flatten a little with your hand to get thicker cookies.
Bake the cookies in the middle of the oven. It depends on your size of cookies and the type of oven you are using; however, most usually bake for 10 to 12 minutes. You would do well to keep checking toward the end so you can avoid over-browning.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This allows them to set and harden into a texture they are meant to be. Finally, try one of your freshly baked chocolate chip cookies with some cold milk; there's no substitute!
You can add delightful crunch and nutty flavors to your chocolate chip cookies with chopped nuts such as walnuts, pecans, or almonds. Add chopped nuts and chocolate chips into the dough before freezing. Toasted nuts have a good flavor and a lot of depth in your cookies.
Add a teaspoon of vanilla extract to your cookie dough for that classic flavor enhancement. You can even try other flavors such as almond or peppermint and be creative in creating some new flavors. Be sure that you only use top-grade extracts for best performance.
Gluten can be easily removed from a chocolate chip cookie for someone with a gluten intolerance or preference. Simply substitute the all-purpose flour for this recipe with a gluten-free flour blend, and make sure that all the other ingredients are gluten-free.
For the ultimate chocolate addict, make double chocolate chip cookies. Add cocoa to dry ingredients for that extra deepened rich flavor in chocolate while adding chocolate chips and chunks for that doubled delight in chocolate.
Store them in an air-tight container at room temperature for up to a week. You can insert a slice of bread for more moisture and softness of the cookies. When you want them crisper, you can allow the airtight container to stand open and aerated.
Another trick is cookie dough can be frozen too. Make the cookie dough into portions and drop onto a lined baking sheet. Freeze completely, then transfer those dough balls into a freezer bag or container. Place frozen dough balls on a lined baking sheet and bake as the recipe directs; you would just add extra time because of the fact it's baked frozen.
If your cookies are stale or you would rather eat them warm, there is nothing to prevent you from heating them. Spread them on a baking sheet and heat them at 300°F (150°C) for 5-10 minutes or until warmed through. Or microwave them for 10-15 seconds.
Serve them plain chocolate chip cookies or get wacky with your displays. Take two cookies sandwich in with a big scoop of ice cream. Crumb over vanilla ice cream, be a hero to hot chocolate or cheesecakes made by using as a bottom in pie.
